    Well said, also it gives you a very hot portion to cook with and then a cooler area away from the coals as well. That allows one to “sear” steaks or what have you and then move things away to finish cooking thoroughly.

    @jj310562 – They cook alot of their food INDIRECTLY…meaning you dont want to cook right overtop the fire and heat, but more to the side so the food can get cooked thru without burning it
