How to Make your smoker more professional like.

I got a Brinkmann Smoker/Grill for fathers day and wanted to make it the best smoker I could. I got some great ideas from amazingribs.com and added a couple twists of my own. So now I have an inexpensive smoker that cooks more like a high end professional one. I have made more mods since this vidieo (my twists, not big ones) and it just gets better. I mean taste wise. If you have an off the rack offset smoker and want to supercharge it, this may just be your ticket. Or a start.

@OvertheArcOutfitters If you build your fire closer to the damper the wind will blow the ashes further away. Then again I don’t use any charcoal at all. I use a NewBraunfels and can smoke with wood 12 hours straight no ash dump. My problem is the smoker getting to hot near the firebox did the baffle work and did it help with temp controll? Would making a baffle and the smoke going under a cookie sheet with a water bowl on top cool it down?

How did you count those yard sticks? Drilled holes and put screws? Or some kind of adhesive? And btw out of all the vids on how to upgrade your smoker this one is by far the most helpful!!

Thanks for allowing the embed code. I embedded in my post about offset smokers at MeatFireGood[dot]com. Your modifications show what it takes to make one of these into a more useful smoker. It would be nice if manufacturers stepped it up so modifications wouldn’t be as necessary. Still, I like my char-griller with some mods.

Good work, i have been wanting to build one out of a drum for a while, I saw the charbroil at walmart but decided against it for the reasons you pointed out here, those were some nice easy mods you made. So what part of Arizona are ya in, I heard KUPD and smiled

where did you get the thermometers and how did you install them?

For the aluminum rulers you attached, did you pre-drill the holes in the grill or the aluminum rulers you attached?

Qhat did you cut the cookie sheet with and at what length?

Why cut the cookie sheet in an arc or semi-circle instead of a rectangle?

  18. lue84 says:

hey how you doing, I bought the same grill for 4th of July and have the same problem with smoke dissipating out. The aluminum ruler idea is very smart!!.. my question is, beside the drilling the holes to mantle to the grill; do you have to do any other mods to the ruler? Thanks!! take care.
