If you have a backyard, and enjoy entertaining outdoors,
then it is an absolute must to have a garden barbecue. Whether this is a small
portable, charcoal barbecue, a portable gas barbecue, a smoker or a massive,
built-in garden barbecue, the backyard just does not seem complete without a
garden barbecue arrangement of some sort.
The ultimate garden barbecue is, of course, the built-in
barbecue then. Just as people tend to congregate in the kitchen at parties, so hosts
and visitors alike enjoy congregating around the garden barbecue, soaking up
the smells of barbecue cooking and sharing a drink and a few words with
friends. While a small, portable barbecue will do, there is no substitute for
the built-in garden barbecue, and the grill is just the beginning of your
outdoor garden barbecue masterpiece.
In many places today, the garden barbecue is part of an
outdoor kitchen area which, just like the indoor kitchen, provides everything
you need for barbecue cooking at its finest.
Designing your outdoor garden barbecue area is limited only
by your budget and your imagination. Sure, the Outdoor grilling surface takes
pride of place and you may find that you want two or three outdoor grilling
surfaces rather than just one, for those big gatherings and parties. Just like
in your kitchen, your outdoor garden barbecue kitchen needs to have storage
space for barbecue tools, for barbecue sauces, and of course spices and
marinades which you can add to your barbecue cooking to make it unique and
special.
Not only does your built-in garden barbecue increase the
enjoyment you will have in your own backyard as you entertain, but it also can
add value to your home when you come to sell. And because it is permanent,
buyers will see a large, inclusive garden barbecue kitchen area as a huge asset
to their purchase, and most will be prepared to pay more because your
beautifully designed outdoor garden barbecue area is an opportunity for them to
fulfil their barbecue cooking dreams with their friends and family.
So if you spend a lot of time barbecue cooking and
entertaining outside, consider making your portable barbecue set into an
outdoor garden barbecue masterpiece. You’ll be investing in your friends and
family, your own enjoyment, your barbecue cooking prowess, and the value of
your home for the future.

In response to his subscribers requests, Chef Tony prepares lemon and herb rotisserie chickens on his Lynx gas grill. Ingredients and procedures are as follows:
Ingredients:
-Young chicken fryers (3.5-4LB) 1-2 EA
-Extra virgin olive oil 4 TBL
-Extra virgin olive oil 5 TBL
-Yellow onion (medium size) 2 EA
-Green bell pepper 1 EA
-Celery ribs 2 EA
-Garlic cloves 5 EA
-Lemon juice 1 whole lemon
-Rosemary (fresh) 4 sprigs
-Thyme (fresh) 4 sprigs
-Thyme (dried) 1 tsp
-Paprika 1 TBL
-Oregano (dried) 1 tsp
-Crushed red pepper flakes 1 tsp
-Granulated Sugar 1.5 tsp
-Lemon zest 1 whole lemon
Procedures:
Combine and whisk together the paprika, salt, dried thyme, dried oregano, granulated sugar, red pepper flakes, 2 sprigs of rosemary (chopped), 5 TBL olive oil, lemon juice, and lemon zest. Next coat your chicken thoroughly, inside out and under the skin, with the 4 TBL of olive oil. Now, rough chop and set aside your onions, bell peppers, garlic, and celery. At this point you are ready for the fun part, rub your chickens inside, out, and underneath the skin with the herb, oil, and lemon juice mixture. Once coated, stuff your chicken with the chopped vegetables and 1 sprig of rosemary and 2 sprigs of thyme in each chicken. With chickens stuffed, you will want to truss your chicken tightly to keep vegetables and aromatics from falling out (Chef Tony has a how to video on this subject, on our website BBQGuys.com). Once you have trussed your chicken, place it on your grills rotisserie skewer rod and place it on your grill. On medium high to high heat, cook your chicken for about an hour without opening the hood; now begin checking every 10-15 minutes for your chickens internal temperature with an instant read thermometer. When the temperature reaches 170F, in the thickest part of the breast, remove chicken and rest under a foil tent for 15 minutes. Slide your chicken off of the skewer, carve, and enjoy!
