I want to find out if one cut of lamb is tougher than another older sheep?

    mutton is tougher than lamb but if you cook it longer it tenders it up.

    I am a former chef and have cooked my share of lamb, mutton and goat, and it depends on the cut, tougher ones like shoulders and leg are long cooking pieces/cuts, but in lamb, mutton and goat you can get loins, racks and tenderloins all relatively tender cuts, mutton does have a more pronounced flavour than goat and young lamb, but is just as nice, I have cooked mutton in Asia and the Caribbean, and like it, it is just harder to find in some country’s and areas, I live in Toronto Canada and we have large Caribbean and Arabic communities so it is easier to find I have mutton last week in a curry.
